Le Dome

With the crisp, steely, mineral-laced 2008 Vatan Sancerre Clos de Neore, my wife and I enjoyed some of our favorite dishes at this marvelous, turn of the century restaurant/brasserie in Montparnasse. The oysters here are always about as good as you will find anywhere in France, but the two dishes that hit on all cylinders (and are as good as can be found anywhere) are their simple filet of sole cooked in clarified butter, and their lobster salad. I have written about them the past, and they never seem to be anything less than sublime. Add to that one of the best fish soups one can get and it’s a perfect place on a Paris afternoon to have a long two to three hour lunch.
